I decided this month is going to be about pasta at How To Cook Water and what better recipe to learn how to make than good ole' fashion Spaghetti & Meatballs.
This version of spaghetti and meatballs is from Mark Bittman and NYT Cooking, the recipe produces light as air meatballs in less than 30 minutes! The trick to light meatballs, when mixing the meat mixture don't over do on the kneading in the bowl, just mix to incorporate. They will look like they might fall apart in the pan with cooking, don't worry they will hold together during the cooking process.
It came with a simple red sauce recipe, but I cheat and use a favorite red jar sauce, and it's delicious. The meatballs freeze great, just freeze without the sauce.
