I’m posting a week early; we’re all very busy getting ready for Christmas morning.
Some people have their breakfast plans set in stone, and some of us are still wondering what to serve our guests. There are many recipes out there that you put together the night before. Most of them are egg casseroles, but since there are a few in my family that don’t like egg casseroles, I needed to find something different. Deep-dish Blueberry French Toast fits in perfectly. This comes from Fairholme Manor on Victoria Island, BC. You put it together the night before and pull it out of the fridge Christmas morning. Put the layered cubes of French bread, blueberries, cream cheese, pure vanilla, and cinnamon in a pre-heated oven for about an hour or until fluffy and golden brown, whichever comes first! Serve it warm with pure maple syrup or crème fraîche, which is a lovely addition.
I serve it buffet-style so my guests can serve themselves with a fresh fruit salad, and some bacon and sausage out on the table.
